Sugar Types and Tasks

Each type of C&H Sugar has different properties. Each enhances the sweetness of your recipes in different ways. And to ensure that you get the best possible results, we guarantee that every bag of C&H sugar contains only 100% pure cane sugar.

White Granulated
C&H Granulated Sugar is the sugar you know best, and its uses – whether for coffee or crème brûlée – are well documented. Generations of experienced bakers and professional chefs know what works, what tastes best, and what bakes best.

Granulated sugar must be kept dry. To avoid clumping and help retain freshness, store granulated sugar in a covered container in a dry environment. Do not refrigerate.

Baker’s Sugar
The choice of experienced, professional bakers.

Since 1961, C&H has produced Baker’s Sugar, a professional-grade cane sugar for demanding professional bakers and chefs across the country. But it was only offered to the professional market. Over time, more and more of our regular customers – many of whom aren’t professional chefs but turn out some pretty special creations on their own – heard about Baker’s Sugar and began asking for it. And that’s why we made this product available to you.

It’s made especially for baking. Unlike the White Granulated, the ultra fine grain size is much much finer. So it mixes, blends and melts more evenly. It’s painstakingly screened to make sure the crystal size is remarkably uniform. And it’s ultra-refined for the highest grade of purity available in the industry. It’s ideal for all sorts of baked goods and confectioneries including cakes, cookies, pastries, brownies, frostings and glazes.

It’s easy to use. C&H Baker’s Sugar measures exactly like regular granulated sugar. A cup is still a cup. A tablespoon is still a tablespoon. And C&H Baker’s Sugar is always made from pure cane… ordinary beet sugar just won’t do.

You get terrific results. A fine, delicate crumb. A silky smooth texture, a rich, delicious sweetness. That great taste of real cane sugar. And lots of compliments. Just ask a professional baker.

Golden Brown
Ask for C&H Golden Brown Sugar, which is always 100% pure cane sugar and is always naturally brown all the way through. Don’t settle for less!

C&H Golden Brown Sugar has a nutty, caramel flavor, natural moistness, and subtle molasses flavor. It’s ideal for cookies, shortbread, spiced cakes, brownies, and crumble toppings. Generally, if a recipe doesn’t specify Dark or Golden, it is intended that Golden Brown be used.

To retain moistness, brown sugar is best kept stored away from light and heat in an airtight container. Occasionally, brown sugar will lose its natural moistness and become hard. To restore it, place it in an oven-proof container, cover and warm in a 250 degree oven until soft. To use a microwave, place it in a microwave container, heat on high, checking every 30 seconds. When soft, immediately measure the desired amount. As it cools, it will harden again.

Dark Brown Sugar
To create flavor that’s deep, rich, and real, use only C&H Dark Brown Sugar. It’s 100% pure cane sugar and, like golden brown, naturally brown all the way through.

Its natural moistness and deep, rich molasses flavor make it ideal for full-flavored or savory recipes. Use it in brownies, gingerbread, coffee or chocolate cakes, fudge, BBQ sauce, marinades, sweet and sour sauce, and pancake syrups.

Like Golden Brown, Dark Brown should be stored away from light and heat in an airtight container. If stored improperly, dark brown sugar may lose its natural moistness and become hard. To restore softness, place it in an oven-proof bowl. Cover the bowl with a clean, wet but not dripping kitchen towel (without touching sugar), and place in either a warm 250 degree oven or in a microwave on high. Check the sugar frequently (every 30 seconds in the microwave). When soft, immediately measure desired amount. Please use caution. The sugar will be very HOT.

Powdered
C&H Powdered Sugar is snowy white in color. It has a delicate, soft, supple texture that’s a pleasure to sift, and it mixes and creams into delicious, smooth frostings.

Simply because of its physical makeup, powdered sugar is susceptible to odor pickup. It should be stored in a sealed container, away from moisture and strong odors.

Superfine
C&H Superfine Sugar is 100% pure cane sugar, derived from natural sugar cane stalks. The extremely fine-grained texture helps Superfine dissolve quickly in hot or cold liquids.

C&H Superfine Sugar is ideal for flavoring any kind of beverage. Try it in every way -- from a cold pitcher of refreshing lemonade to a hot coffee latte. It’s also wonderful in special recipes such as meringues, icings, glazes, ice creams and sorbets, where an extra smooth, light texture is important.

Like C&H Granulated and Baker’s Sugar, Superfine must be kept dry. To avoid clumping and help retain freshness, store Superfine Sugar in a covered container in a dry environment. Do not refrigerate.

Washed Raw
Crystallized from the initial pressing of 100% pure sugar cane, C&H Washed Raw Sugar retains its distinctive, natural color and flavor.

Try C&H Washed Raw Sugar in place of granulated sugar on breakfast cereals; it is especially pleasing on hot oatmeal. While it does not dissolve easily, it adds an interesting flavor when stirred into coffee, espresso or tea. Its crunchy texture is perfect as a topping on many desserts, and provides variety when sprinkled over waffles.
